Cajun Chicken with Sweet Potato Wedges

What you'll need:

  • 1 Chicken thigh (for a baby portion).
  • ½ teaspoon Cajun Spice Mix
  • 1 dollop Greek yogurt (optional)
  • 20 g Sweet potato
  • Magic Herb Dust (optional)
  • Olive Oil

What you need to do:

  • For 9mths+ Dice 1 chicken thigh into small bite size chunks. Mix a dollop of Greek yogurt with 1/2 tsp of Cajun spice mix. For older babies and kids (12mths+) you can leave out the yogurt if you prefer (though it does make it tender). Marinade the chicken chunks for a few minutes (longer if you have time).
  • Cook the chicken thigh chunks on a medium heat for around 5 minutes until chicken is thoroughly cooked and not pink inside. Leave it to cool slightly before serving.
  • Cut the sweet potato into finger chip sized wedges. Drizzle with a little olive oil and a pinch of magic herb dust (if you have it). Cook in an air fryer at 170 degrees for 15 mins, or in the oven at 180 degrees for 20 minutes.
  • Serve the Cajun chicken with the sweet potato wedges and any other veggies you prefer.
