Cajun Salmon with sweetcorn and sweet potato fries

This kid-friendly Cajun Salmon is a super speedy weeknight dinner. It's one of our weekly staples as Deeya loves the vibrant flavours and literally licks her fingers clean every time. The salmon is packed full of goody Omega-3 fatty acids (superfood for a developing brain), and the herbs and spices add a vital dose of vitamins.

It's sure to win over even the pickiest eaters, so give it a try.

Here's what you'll need:

 Here's how to make it:

  • Cut the salmon fillet into chunks of around 3cm each (this allows for quicker cooking and more seasoning on the salmon)
  • Sprinkle around 1/2 teaspoon of Cajun Spice Mix on to the salmon, and give it a good mix. It's ready to cook straight away, or if you have time let it marinade for around 10minutes whilst you prepare the other ingredients. 
  • Cut the sweet potato into 1cm wedges and coat with a teaspoon of oil (we like avocado or olive oil) and sprinkle over 1/4 tsp of magic herb dust. Give it a shake, and pop in the oven for air fryer until cooked (usually around 20 minutes at 180degrees)
  • When there's 5 minutes left for the sweet potatoes to finish cooking, you can start cooking the salmon. 
  • Warm a small frying pan over the cooker and add in a little oil or butter. Once hot add in the marinated salmon. Cook on one said for around 3 to 4 minutes. Once it's turned a nice solid pink colour, flip it over and cook for another 2 minutes. The salmon should be pink all the way through, and if touched will flake away easily.
  • Put the sweetcorn in a bowl (if frozen, pour over with hot water and let it defrost for a minute or two). Then drain and drizzle with a little olive oil or melted butter. If using tinned sweetcorn, just warm it a little in a pan or microwave, then drizzle over with olive oil or melted butter. 
  • Now ready to serve, put the salmon, sweet potato and sweetcorn on your child's favourite plate!
